Epiphone Les paul standard **OR** Fender highway one Stratocaster ??????

The Epiphone is cheaper, and I wouldn't doubt it being the better guitar. I own one and I love it. You could buy the Epiphone and some nice Seymour Duncan or Gibson pickups and still save some money as opposed to the Fender.
